Avoiding the Dangers of a Gluten-Free Diet

With the significant advances in knowledge of the pathogenic, epidemiological, clinical and diagnostic aspects of Wheat-Related Disorders, our understanding of immune reactions to the proteins found in wheat, rye, and barley has been rapidly growing. However, increased intestinal inflammation still occurs in 80-92% of celiac patients on a gluten-free diet. Why do our patients have such an increase in mortality rate after diagnosis? This presentation will summarize the current consensus on gluten-free diets and introduce guidelines for personalized recommendations.
